Crispy noodle stir fry 

2 tsp oil
600g chicken breast, cut in strips
4 cups stir fry frozen mixed vegetables
3 Tbsp peanut butter
1/3 cup sweet chilli sauce
2 Tbsp water
1 packet crispy noodles

Heat oil oven high heat in (ideally) a wok, stir fry chicken until just undercooked then transfer to a plate, then do the same for the frozen vegetables. In a bowl combine peanut butter, sweet chilli sauce and water. Add everything except the noodles together and stir fry until cooked through, then at the end add the crispy noodles. The noodles will soften relatively quickly so if you're having some as leftovers leave the noodles out until you reheat.
