Pizza Dough
2 cups warm water
2 tsp sugar
2 tsp active dried yeast
5 cups high-grade flour
2 Tbsp extra virgin olive oil
1 tsp salt
Add sugar to the water and stir until dissolved, then add yeast and let sit for 10 mins. Add flour, oil and salt and combine to a dough. Knead for 5 minutes until smooth and a little sticky. Transfer to an oiled bowl and cover, leaving to rise for 40 minutes.
Once risen to twice the size transfer onto a floured surface and shape it to cut into 4 even pieces, roll into balls and leave to rise for 15 minutes.
Place the pizza stone in the oven and preheat to 240C. Roll or press out the dough on baking paper and add toppings as desired, then transfer to the preheated pizza stone. Bake until topping are cooked and base is golden and crispy.
